So, this forum (bbpress.org), doesn’t use the categories at all, right?

It just uses the /forums without parent categories.

Is this correct?

Correct @lp9086, we have 6 forums here on bbPress and no categories, or parent/child forums, just plain ‘ol forums 🙂
