On my website the [bbp-forum-index] page looks different compared to the demopage and there is nowhere to change this.

How can I change this layout.
Should I change the forums and categories or is it something else.

unfortunately the demo page you gave a link to requires login access to that premium theme.

I’d suggest you raise the issue with your premium theme provider
