I was thinking of using the “This topic is not resolved” plugin with different values in there to create certain categories within my forum, whilst keeping them in the same forum theme.

e.g (and it is only an e.g!)

Forum Dating

This topic is about:

> Girls

> Boys

> Neither

but then allowing a show by sub topic. Is there a way to show a list of these statuses (stati?) individually?

You can make a view to filter just about any way you want. Just bypass the proprietary internal bbPress query system and make your own mysql query. Study the My Views plugin set to see how it’s done.
